Father's Day Brunch

Give Dad the five-star treatment by kicking off his Father’s Day celebration with a Father’s Day brunch. It's a delicious way to honor Dad with some of his favorite breakfast foods. Easy Eggs Benedict


Ingredients:
  •  4 slices Canadian bacon
  •  4 eggs
  •  3 egg yolks
  •  4 English muffins (toasted)
  •  1 tsp. white vinegar
  •  1 cup butter
  •  1 tbsp. heavy cream
  •  1 dash ground cayenne pepper
  •  1/2 tsp. salt
  •  1 tbsp. lemon juice
 Directions:
  1.  Fry the Canadian bacon in a medium-sized frying pan over medium heat. Cook on each side until evenly browned.
  2.  To make the poached eggs, fill a large saucepan with 3 inches water and bring to a boil. Pour in the vinegar and break the eggs carefully into the water. Cook them for about 2 to 3 minutes or until the whites are set but yolks are still soft.  Remove eggs with a slotted spoon.
  3.  To make the hollandaise sauce, melt the butter until bubbly in a small pan. Remove from heat to avoid burning. Briskly whip the egg yolks, heavy cream, cayenne pepper and salt until creamy. Add the hot butter slowly while continuing to blend the mixture. Add the lemon juice using the same technique. Set sauce aside until ready to serve.
  4.  When ready to serve, place the toasted English muffin on a plate. Top with a slice of Canadian bacon, a poached egg and drizzle with hollandaise sauce to finish.

Sausage Quiche

Ingredients:
  •  10-12 slices of bread buttered and cubed
  •  10-12 eggs
  •  1 tsp. salt and pepper
  •  1 tsp. garlic powder
  •  1 tsp. onion powder
  •  ¼ cup milk
  •  2 pounds of breakfast sausage (no casing), diced
  •  24oz. sharp cheddar cheese, grated
 Directions:
  1.  Preheat the oven to 375 degrees.
  2.  Spread the cubed buttered bread across the bottom of a 9x13 glass baking dish.
  3.  Beat the eggs with the salt, pepper, garlic powder, onion powder and milk until thoroughly combined. Pour over the bread.
  4.  Cook sausage and drain off fat. Pour over bread and egg mixture evenly. Top the entire quiche with grated cheese.
  5.  Bake for 30 minutes, until firm. Let cool slightly before serving.

Heart-Shaped Pancakes

 
Ingredients:
  •  2 cups flour
  •  1 tsp. salt
  •  2  tbsp. sugar
  •  4 tsp. baking powder
  •  2 eggs, beaten
  •  1 1/2 cups milk
  •  4 tbsp. butter (softened)
  •  Heart-shaped cookie cutter
 Directions:
  1.  Preheat griddle to medium heat.
  2.  To make the batter, sift flour, salt, sugar and baking powder into a bowl. Combine the eggs, milk, and butter in a separate bowl and slowly stir into dry ingredients. Mix well.
  3.  Pour a ladle full of batter onto the griddle. Cook on each side for about 4-5 minutes or until golden brown. Cut out your heart pancakes with cookie cutter.
  4.  Top with fresh berries, powdered sugar and maple syrup.

Homemade Home Fries

Ingredients:
  •  3 medium russet potatoes, cubed
  •  3 tbsp. butter
  •  Salt and pepper to taste
  •  1 tsp. of paprika
 Directions:
  1.  Rinse potato cubes under cool water, drain well and pat dry.
  2.  Melt butter in a large skillet over medium heat. Place potatoes in the skillet and stir to mix with the butter. Season with salt, pepper and paprika.
  3.  Cover with a lid and cook for 10 minutes. Remove the lid and cook for another 10 minutes. Flip the potatoes frequently to make sure all sides are brown and crispy. Salt to taste before serving.

Bloody Mary

 
Ingredients:
  •  1.5 oz. citron flavored vodka
  •  2.5 oz. tomato juice
  •  2 pinches salt
  •  2 pinches pepper
  •  2 dashes hot sauce
  •  2 dashes Worcestershire sauce
  •  1 squeeze of a lemon
 Directions:
  1.  Mix together all of the ingredients in a shaker.
  2.  Shake until combined then pour into an 8 oz. glass filled with ice.
  3.  Garnish with a stalk of celery and a lemon wedge.
