Kentucky Derby Party Recipes

Appetizer: Banana Nut Bread

Ingredients:

  • 1 cup butter
  • 2 cups of sugar
  • 4 eggs
  • 1/4 tsp of salt
  • 2 tsp of baking soda
  • 4 cups of flour
  • 6 bananas
  • 1 cup of walnuts (chopped)

Directions:

Preheat the oven to 325 degrees. Mix one cup of butter and two cups of sugar together. Add four eggs, and make sure to beat the eggs, one after the other, after adding them to the mixture. Combine ¼ of a teaspoon of salt, two teaspoons of baking soda, four cups of flour, six mashed bananas (the riper they are, they sweeter they taste) and one cup of chopped walnuts. Add the dry ingredients to the wet ingredients mix well and pour the batter into two greased pans. Put the pans in the oven, and bake them for around one hour and 15 minutes. Let the bread cool before serving to guests.

Side Dish: Fruit Salad

Ingredients:

  • fresh peach (sliced)
  • strawberries
  • kiwi
  • blackberries
  • blueberries
  • apple (sliced)
  • sprigs of mint for a garnish

Directions:

Plan the amount of fruit you will purchase, based on the number of guests attending the Kentucky Derby party. Combine all of the fruit in a bowl and place a cover over the top of the bowl. Keep the bowl in the refrigerator until you are ready to serve to guests. Garnish with mint just before serving.

Sandwiches: Chicken Salad Sandwiches

Ingredients:

  • 6 boneless chicken breasts
  • 1 cup of celery (chopped)
  • 1 tsp of spice blend
  • 1 cup of mayonnaise
  • 2 packages of small bulky rolls

Directions:

Dice six, cooked, boneless chicken breasts into pieces. Combine the pieces with one cup of chopped celery, one teaspoon of spice blend and one cup of mayonnaise. Mix all of the ingredients together, and place the mixture in the refrigerator to stay cold. Stuff bulky rolls with the chicken salad shortly before the Kentucky Derby party. Do not stuff the bulky rolls too far in advance, as the rolls will get soggy.

Dessert: Pecan Pie

Ingredients:

  • 3 eggs
  • 1 cup of dark corn syrup
  • 1 cup of sugar
  • 1/4 cup of melted butter
  • 1 tsp of vanilla extract
  • 1 cup of pecans (halved)
  • Pie crust

Directions:

Preheat the oven to 350 degrees. Next, beat three eggs and add one cup of dark corn syrup, one cup of sugar, ¼ of a cup of melted butter and one teaspoon of vanilla extract. Take one cup of pecan halves, line them on the bottom of the pie crust, and pour the pie mixture over the pecans. Place the pie in the oven for one hour, and let it cool before serving it to guests. Add a scoop of vanilla ice-cream and whipped cream to the top.
