Spring Dessert Recipes

There are lots of reasons to celebrate in the spring, from Easter and Cinco de Mayo to Mother's Day and graduations. For every celebration, you need an ample amount of spring party desserts. While pies and cakes are fine choices, we've collected a few spring party recipes that will be favorites for a long time to come. 

Lemon Ice Cream Cups

 
A yummy and refreshing spring dessert to cleanse everyone's palate. 

  • 4 large lemons
  • 1 pint of lemon sorbet
  • Optional: whipped cream + mint for garnish
Trim the bottom off of the lemons so that they sit flat on a plate. Note: You don't want a hole in the bottom of your lemon so be sure to not cut too much off. Next, cut the top off of the lemon (about 1/4 to 1/3 to of the lemon) and scoop out all of the pulp from the inside of the lemon. Scoop the sorbet into the lemon shells and add whipped cream and fresh mint on top for garnish. Freeze the lemon cups if not serving them immediately. 


Three Berry Cobbler

One of the sweetest spring dessert ideas, best if made with fresh berries.
 
 
  • 1 1/4 cups all-purpose flour
  • 1/2 cup sugar
  • 1 1/2 tsps. baking powder
  • 3/4 cup milk
  • 1/3 cup butter or margarine, melted
  • 3 cups fresh blueberries, raspberries and blackberries
  • 1/3 cup sugar
 
Combine flour, 1/2 cup sugar and baking powder in a bowl. Add milk and butter and stir gently. Spread the batter in a greased 2-quart square baking pan. Scatter the berries over the batter with the rest of the sugar. Bake at 350 degrees for 45 minutes, or until browned on top. Serve warm with ice cream. 


Peach Cake

Spring desserts are best served warm with ice cream!
 
  • 1/4 cup butter 
  • 1/4 cup packed brown sugar
  • 1 1/2-2 cups sliced, pitted and peeled peaches 
  • 1 1/4 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter, softened 
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup milk
Melt 1/4 cup butter in an 8x8-inch baking pan in a warm oven at 350 degrees. Remove from oven and add brown sugar, spreading evenly. Arrange the peaches over the sugar mixture and set aside. In medium bowl, combine flour, baking powder and salt and set aside. In a large bowl, beat the rest of the butter on high speed for 30 seconds. Add sugar and beat. Add egg  and vanilla and beat. Alternate adding the flour mixture and milk and beat on low speed. Spread the batter over the peaches. Bake for 40 minutes and cool for 10 minutes. Loosen cake and invert on large plate. Serve warm.
